Sure Bet Peach Sorbet

Here’s a super delicious, light, refreshing, not too sweet dessert that takes just a few minutes from inception to satisfaction. It is less decadent indulgence and more vibrational invigoration.

Ingredients:

Two 10 ounce packages organic frozen peaches
¾ cup pure, unsweetened coconut water, available at your local natural food store (I like “One” brand)
¾ cup organic pear juice (I like Bionaturae brand)
One tablespoon organic agave nectar
One tablespoon organic extra virgin coconut oil (I like Nutiva brand)
One teaspoon organic non alcohol vanilla extract
Three shakes organic cinnamon (according to Chinese medical theory, great for circulation and
promoting balanced blood sugar– yep, tastes and smells great too)

Rinse the frozen peaches with some pure spring water, pop into the blender. Add the coconut water and pear juice. Blend for several seconds and add in the vanilla, agave nectar, and then the coconut oil. If need be, turn the blender off and remove the pitcher from the base and stir a little with a wooden spoon. You can also add a few more drops of coconut water to facilitate mixing while maintaining a nice tight consistency in the sorbet. Towards the end, add some cinnamon. If things accidentally get too liquefied, don’t worry, just add some more organic frozen peaches or even berries (always keep some extras in the freezer). Serve in a big mug with another shake of cinnamon on top. There will be plenty for two with a little left over.

Don’t forget to clean the blender, utensils, and counter to be ready for your next session in the kitchen.
