Here’s a great summer salad recipe from the book I’ve been reading called Forget the Diet-Its, Learn to Live-It. This is a wonderful, easy-to-follow-and-implement book by Karen Knox, a beautiful Christian woman and fellow distributor for the whole food supplement I market. I hope your family enjoys it as much as mine!
Recipe:
Mixed Greens – romaine and spinach or spring mix
Fresh pineapple chunks
Raisins
Dried cranberries
Chopped walnuts or pecans
Diced red pepper
Diced celery
Green onion
Sprouts
Use whatever quantities fit your fancy and according to how many this will serve and whether it is the main course or just a side salad. Mix all ingredients and top with Raspberry Vinaigrette Dressing to serve.
Raspberry Vinaigrette Dressing
Fast & Easy: Raspberry-Walnut Vinaigrette Lite by Ken’s Steakhouse
For a sweeter, less vinegary dressing, blend together:
1 cup fresh pineapple (or canned if necessary)
1 16-oz. bottle Ken’s Raspberry-Walnut Vinaigrette Lite dressing
2 Tbsp. freshly ground flaxseed
Keep refrigerated, up to three weeks
